Wild Lavender Honey
The Honey from Herdade Aldeia de Cima, pure and obtained without any human intervention, is based on the diversity of a typically Mediterranean wild flora, with great pollen richness, highlighting the rosemary that grows spontaneously in the Serra do Mendro cork oak forest, an ecosystem unique, untouched by industrial and urban pollution. The warm temperatures of early summer are ideal for extracting liquid honey, so collection usually takes place between June and July, at the height of production. In winter, low temperatures can cause honey to crystallize without ever losing its nutritional value, a sign that attests to its quality. Over time, liquid honey tends to crystallize. It must be stored in a dry, cool environment and at room temperature
